Blender Banana Bread Recipe - The Quickest and Easiest Way to Make Banana Bread

I am always looking for the cheapest, fastest and easiest way to do things. I think I have it perfected as far as banana bread goes. Below the recipe ingredients I will have more detailed instructions with a bit of information

Ingredients:

  • Three bananas
  • 1/2 Cup of oil (or melted butter)
  • 2 eggs
  • 1 Cup Brown (or white) sugar
  • 1 tsp salt
  • 1 tsp powdered milk (optional)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 2 cups flour
Directions:

Get your three bananas and break them into chunks and put them into the blender. Add the 1/2 cup of oil and two eggs.

Blend them all together.

Now add the powders: 1 cup of sugar, and a teaspoon of salt, nutmeg, cinnamon, baking soda and milk powder. You can also add some vanilla if you like.

Then mix these together.

Next you will need to add the flour. I know what you are thinking.... putting flour in a blender will make the bread flat. You don't have to mix this in a blender if you don't want to. I usually stir it around with my spoon a bit and turn the blender on in short bursts. This gets is really smooth. I can't claim that this is good for your blender, so do this at your own risk. It will be pretty thick. Also; using the blender creates air pockets when it is blending, so you probably will have to stop the blender every once in a while so it can release air pockets.

Next, you will pour the batter into the pan you are going to use.

Since I am in China, the best I have is a toaster oven. I cook it at 175 C (350 F) for about 40 minutes or until I can stick it with a fork and have it come out clean.

There you have it. Quick and easy banana bread!

It tastes fantastic with some banana frosting. Click here to find out how to make it.

I find that another great way to cook it here in China is to use a rice cooker. Click here to find out how to cook banana bread in a rice cooker.
